Smoked Cheese

Not something I thought would ever make, but my dear boyfriend has a new obsession with smoking food.. Long story short, we have a custom built smoker in our garden.
After loads of research, home smoking in South Africa is not a well documented industry. With no books and limited information online, we designed a box and built it ourselves.
This recipe is a prefect option to try, and if you do not have a smoker, baking in the oven on a singed oak or cedar plan will work perfectly.
Serves 8-10 as a snack
Degree of difficulty: Easy
Ingredients:
500g Cambrieni (could also use a 250g camembert or 125g, will need to adjust the cooking time)
50g Chilli jam - thanks Woolies
50g toasted pine nuts (macadamia nuts would be a great substitute)
micro herb to garnish
1 baguette stick
Equipment:
A smoking plank - Weber has a great range of them, and so does Woolies. I just used a oak mini serving board
Smoker - or weber with soaked wood chips (also a Weber range or find them in your local Builders)
or you can make this in your oven, just burn the board on the fire (to get that smoky flavour) and bake at 180 degrees
Top your cheese with chilli jam, and nuts, use your preferred heat source, small cheese 10-15 minutes the larger ones 20-40 mins, keep an eye on him
Carefully remove the cheese to a serving board, top with the micro herbs and serve with some delicious bread.
